DIY Food Favor: Apple Earl Grey Jam

Straight from our DIY Food Favors inside the new issue, we are sharing a food favor that is perfect for a fall wedding or as a guest favor if you’re hosting the family feast this holiday season. First up is our Apple Earl Grey Jam favor. Remember these labels are part of our free printables!

INGREDIENTS

  • 3 1/2 pounds Granny Smith apples
  • 6 1/2 cups water (plus 8oz for tea preparation) 4 cups sugar
  • 2 tablespoons lemon juice
  • 3 1/2 tablespoons Earl Grey tea

PREPARATION

  • Wash and quarter the whole apples. Do not peel or core.
  • In a heavy pot, cover with 6 1/2 cups water, and simmer 1/2 hour on low heat until the apples are soft and pulpy. Strain the mixture through a boiled jelly bag.As an alternative you can take layers of cheesecloth doused in boiling water and wrung out.This process of straining will take several hours. Refrain from pressing or squeezing which will cloud the juice. Strain the juice a second time using the above method, pour into a bowl and refrigerate overnight.
  • Measure 4 1/2 cups of the juice into the pot, scooping the juice from the top of the bowl to avoid any sediment at the bottom. Add the sugar and lemon juice to the pot and gently heat the mixture to dissolve the sugar. Prepare your tea by adding 8 ounces boiling water to the tea and letting it steep for 3 minutes. Before adding the tea to the pot, bring the mixture to a boil and cook it nearly to the jelling point. Add the tea and return the mixture to a boil. Boil to the jelling point (220F) and remove from heat.
  • Ladle the hot jelly into your sterilized jars and process in a water bath canner.

Signature Cocktail Recipe: Fall Fig Cocktail

This cocktail includes all the classic ingredients for fall. From bourbon to maple syrup and the key ingredient: balsamic vinegar, the Fall Fig Cocktail will work marvelously for your wedding guests this fall or even just your holiday guests this season. We hope you are enjoying this season as much as we are, and this signature cocktail recipe should only make it better!

INGREDIENTS

  • 1 California black mission fig
  • 1 1/2 oz bourbon
  • 1/2 oz fresh-squeezed orange juice
  • 1/4 oz maple syrup (Grade B, if you can find it)
  • 1 tsp balsamic vinegar

INSTRUCTIONS

  • Remove the stem from the fig and cut it into quarters
  • Place the fig pieces in the bottom of a mixing glass
  • Add the maple syrup and muddle into a paste
  • Add the bourbon, orange juice, and balsamic vinegar, and fill the glass with ice
  • Shake and double strain into an old-fashioned glass with ice.
